St. John the Baptist Parish in south Louisiana holds its annual Andouille Festival each year in the fall. The festival promotes St. John the Baptist Parish as "The Andouille Capital of the World." Andouille sausage is a smoked sausage made out of pork and garlic. The sausage is closely associated with Cajun food, where it plays a major role in dishes such as jambalaya.
